Dinner Salad!
A salad inspired by Chez Gladine (Paris, France), utilizing whatever I had available in my fridge. It’s quite a filling butter lettuce salad, heartily topped with skillet potatoes, corn, marinated artichokes, hard boiled egg, tomatoes, roasted peppers, and pieces of rotisserie chicken; more than enough to please any veggie-naysayers.
